In honor of Cinco de Mayo, we’ve curated the perfect Mexican-themed dinner party for you to tackle. Each of the below recipes comes from some of our favorite bloggers, and they’re all sure to be winners today or any day of the week!
All of the recipes below can be prepared, or at least prepped, ahead – meaning you’ll be minimizing your time in the kitchen when you’re friends arrive (and maximizing your margarita drinking time!)

SIGNATURE COCKTAIL: Skinny Margarita
That’s right – we’re starting the party in the right place. The drinks! We love a classic margarita, and this skinny margarita recipe from What’s Gaby Cooking is a winner. This recipe cuts back on the sugar and pumps up the citrus, which keeps things lighter (and makes the sugar hangover less of an issue)!
We love having a couple different things on hand for our guests to nibble on while we’re mixing the drinks. This Restaurant Style Salsa and Queso Fundido duo are the perfect complementary light bites. The salsa brings a fresh and crisp flavor (and a little bit spice, if you want!), and the meat and cheese in the queso fundido bring savory deliciousness to the table. Pour out a bowl of store bought chips and chop up some veggie sticks (think carrots and cucumbers) and the perfect starter spread is complete!
MAIN COURSE: Ancho Chicken Enchiladas
We’ve never met an enchilada we didn’t like, but these Ancho Chicken Enchiladas take the cake. Ali from Gimme Some Oven is a self-proclaimed Mexican food fanatic, so we always trust any Mexican recipes coming out of her blog. These enchiladas are no exception! YUM. 😛
A little scoop of Green Mexican Rice alongside a pile of the Best Guacamole Ever and we have reached side dish perfection. Both recipes are bright and loaded with fresh flavor, providing the perfect complement to the cheesy enchiladas. Plus, Gaby from What’s Gaby Cooking has literally written the book on avocados, so she’s not exaggerating with the “Best Guacamole Ever” recipe title!
DESSERT: Mexican “Unfried” Ice Cream
If anyone has any room left after all of the deliciousness above, you’re sure to please your guests with this Mexican “Unfried” Ice Cream from Skinnytaste. The crunchy cinammon topping combined with cold vanilla frozen yogurt = yum city.
